Clover Hill - Sparkling Dosage
Clover Hill has become synonymous with elegance and refinement, gaining a reputation of uncompromising quality. Poised atop the East Tamar Valley, the Clover Hill Cellar Door’s breathtaking position overlooks the beauty of the vineyard, and is set amongst the picturesque Lebrina scenery with views to Bass Strait. Guests have an opportunity to take part in a hands-on winemaking experience, learning the techniques used in the art of matching the correct dosage with our award winning methode traditionelle Clover Hill Cuvée Rosé NV. The class will be conducted at Clover Hill’s award winning, spectacular hilltop cellar door.

Delamere - traditional method Sparkling – the process
An immersive tour of traditional method sparkling wine in the Delamere Vineyards winery, with owners and winemakers Fran Austin and Shane Holloway. Explore the making of sparkling - the first stage of wine making, then blending and tirage, a demonstration of riddling, disgorging and liquer addition. Tastings will reveal the effect of aging on lees and time under cork.
Delamere occupies a special spot in the ‘sparkling’ heartland of the Tamar, at Pipers River, where some of Australia’s finest fruit is grown. Fran and Shane share winery and vineyard management, family and a passion for cool climate wines. At Delamere, they produce both sparkling and table wines of outstanding character, and Fran has been feted with numerous awards including Gourmet Traveller Young Winemaker of the Year.

Holm Oak – the role of oak in Pinor Noir
Wine lovers and collectors are promised unique insights as Rebecca Duffy shares her deep knowledge of the role of oak in the making of Pinot Noir. The daughter of Holm Oak’s original owners and now an acclaimed winemaker, Rebecca has been acknowledged with many wine industry and business awards and runs Holm Oak in partnership with husband and viticulturist Tim Duffy. Their wines are grown, made and bottled on site, reflecting both the Tamar and the personalities of the makers – honest, down to earth and authentic – picking up a 5 star Halliday rating along the way.

Pipers Brook (Kreglinger) – guided wine tasting paired with magical music
The vineyard and ocean views may be panoramic at Pipers Brook Vineyard but the courtyard promises to be cosy, for this guided wine tasting with Senior Winemaker Luke Whittle, and recital by Tasmania’s own harpist Emily Sanzaro.
In a unique pairing of wine with music, guests will gain deeper knowledge of the crafting of the Pinot Noir, Grigio and Sparkling which have become a hallmark of the Tasmanian wine scene. Luke’s winemaking career encompassed New Zealand, Canada and Europe before his ever-growing passion for cool climate wines brought him to Tasmania and a place in the Kreglinger wine team.
We have paired wine with the magical sounds and visual artistry of Emily Sanzaro’s harp repertoire to bring you a unique and elegant occasion. Blankets and heating in our courtyard add that special cosy Tasmanian appeal.

Swinging Gate – Pinot blending workshop (take home your own blended bottle)
It’s not often you have the chance to make your own bottle of Pinot Noir, but that’s what you’ll do at Swinging Gate with winemaker Douglas Cox. Learn the techniques involved in blending in the barrel and the winery, and take your own bottle home with you.
The cellar door backs onto the winery, once the old machinery shed but now repurposed and upcycled. A former nurseryman, Doug has single-handedly rejuvenated the vines since buying this long-standing vineyard. His approach to wine making combines a love and feel for the vine and the wine, innate blending know-how, a warm welcome and a lot of fun.
A visit to Doug’s cellar door is never dull, and even vineyard dog Nellie occasionally gets roped into the wine making malarkey (although no creatures or wines are harmed in the process).

ABALONE AND PETUNA SEAFOOD BREAKFAST – A collaboration of vigneron neighbours
What better way to start your day than a Sea to Vines experience at historic Waterton Hall on the banks of the Tamar River at Rowella. Join Waterton Hall and Chartley Estate for a seafood breakfast in the convict-built barn. Enjoy freshly cooked abalone paired with either Chartley Estate sparkling or Waterton Hall premium white wines. The breakfast will feature seafood from Petuna, and be followed by a History, Walking and Tasting Tour of Waterton Hall.
Peter from Chartley Estate, with over 38 years’ experience in the Abalone industry, will prepare some of his finely sliced freshly caught Blacklip Abalone tossed in a wok and cooked with black pepper and squeezed lemon straight to your plate. Petuna Seafoods will showcase their award-winning Tasmanian seafood products including freshly shucked oysters, seafood pate, premium smoked salmon and hot smoked salmon, served with freshly baked local sourdough.
Included in your Breakfast is a choice of a glass of Chartley Estate Sparkling or Waterton Hall Riesling or Viognier.
After breakfast and included in your ticket, join us on a leisurely guided History, Walking & Tasting Tour taking in the vineyards and historic grounds of Waterton Hall including the 1850’s Convict built Barn, the Hall (outside) and Garden, Boatshed on the Tamar River and the Schoolhouse. The walking tour includes tastes of all Waterton Hall wines.
